Honey Sesame Soba Noodles

Soba (buckwheat) noodles tossed in a honey sesame sauce making for a quick and simple take-out style meal! This dish only takes 20 minutes. You can make a bigger batch to last several meals!

Ingredients

  • 8 oz soba noodles
  • 1 cup broccoli
  • 1 red bell pepper cut into strips
  • 1 whole carrot cut into strips
  • 1/2 cup edamame
  • green onions and sesame seeds for garnish

Honey Sesame Sauce

  • 2 tbsp sesame oil
  • 2 tbsp cashew butter
  • 2 tbsp honey
  • 2 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 clove garlic minced

Instructions

  • In a large pot, cook noodles according to package instructions. drain and add back into pot.
  • Mix together sauce; sesame oil, cashew butter, honey, tamari, rice vinegar and garlic, then leave to side.
  • In a medium skillet, heat up 1 tbsp sesame oil and cook broccoli, red bell peppers and carrot strips for 1 minute.
  • Add veggies into pot with noodles and edamame. Pour sauce all over and toss to coat! Garnish with fresh green onions and sesame seeds on top!
