Ingredients

  • 1 lb chicken thighs and drumsticks
  • Kosher salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1/3 cup soy sauce Silver Swan brand
  • 1/4 cup white distilled vinegar Datu Pitu brand
  • 5 cloves garlic smashed
  • 2 bay leaves
  • 1 large yellow onion sliced
  • 2 –3 medium potatoes peeled and cut into large chunks
  • 1 teaspoon whole black peppercorns optional, for a more traditional flavor
  • 2 scallions sliced, for serving
  • Cooked rice for serving

Instructions

  • Add in onion, chicken, soy sauce, vinegar, garlic, bay leaves, potatoes and whole peppercorns (if using).
  • Stir everything together, leaving more potatoes on top to prevent them from overcooking.
  • Seal the lid and cook on High Pressure for 10 minutes. Allow a natural release for 5 minutes, then quick release any remaining pressure.
  • Serve warm over rice!
