Protein-Packed Vegan Breakfast Burrito

Ingredients

  • 4 large burrito sized tortillas
  • 10 oz plant-based "chorizo"
  • 4 small potatoes
  • 2 cup veggies of choice
  • 1 medium avocado
  • vegan cheese optional
  • salsa or hot sauce for serving

Instructions

  • Heat a skillet over medium heat and add your vegan chorizo. Cook for 5-7 minutes, stirring occasionally, until browned and fragrant. Remove from pan and leave to side.
  • Preheat oven to 375F and prepare baking sheet. Add chopped potatoes and veggies of choice. Toss in sea salt and pepper. Roast for 30 minutes until veggies are crisp and potatoes are lightly browned.
  • Warm your tortilla in a dry skillet or microwave. Layer your ingredients: start with vegan chorizo, followed by roasted potatoes, veggies, avocado slices, and vegan cheese if using.
  • Fold the sides of the tortilla inward, then roll tightly from the bottom up to create a burrito.
  • For an extra touch, lightly toast your burrito in a skillet to crisp up the tortilla. Slice in half and serve warm with salsa and/or hot sauce!
