Ingredients

  • 1 ripe banana mashed
  • ½ cup plain whole milk yogurt unsweetened
  • ½ cup pumpkin puree unsweetened, not pie filling
  • 1 large egg
  • 1 tsp vanilla extract optional
  • ¾ cup all-purpose flour or oat flour you can blend rolled oats into oat flour
  • ½ tsp cinnamon
  • ½ tsp baking powder (added if i'm making it for my toddler)

Instructions

  • Preheat your waffle maker and lightly grease if needed.
  • In a bowl, mash the banana until smooth.
  • Mix in yogurt, pumpkin puree, egg, and vanilla until well combined.
  • Stir in oat flour, cinnamon, and baking powder until a thick, spoonable batter forms.
  • Cook waffles until golden and set (about 3–4 minutes, depending on your waffle iron).
  • Let cool slightly, then cut into strips or small bites for babies.
