Rice Cooker Hainan Chicken and Rice (SO easy!)

The star of the show in this dish is the fragrant rice with cooked in stock, ginger, garlic, oil and green onions. The chicken was so tender and perfect with the ginger scallion sauce and sweet dark soy sauce! This has been a favorite in our home recently!

Ingredients

  • 2 cups uncooked white long grain rice
  • 2 cups chicken broth
  • 1 tablespoon fresh ginger minced
  • 1 tablespoon garlic minced
  • 1 stalk green onion cut into 1 inch strips and halved
  • 1 tablespoon oil or chicken fat
  • 3 chicken thighs
  • 3 bundles bokchoy

Ginger Scallion Sauce

  • 2 tablespoons minced ginger
  • 2 stalks green onion finely minced
  • 2 tablespoons oil
  • pinch of sea salt

Sweet Dark Soy Sauce

  • 1/4 cup water
  • 2 small pieces of rock sugar or 2 tablespoons sugar
  • 1/4 cup dark soy sauce

Instructions

  • Wash rice and then add to rice cooker. Add in broth, ginger, garlic, onion and oil, add chicken thighs on top spread apart. Cook on white rice function. When done cooking, open and add in bok choy to steam for 5 minutes. 
  • To make ginger scallion sauce, mix all ingredients together. For the sweet dark soy sauce, add water and sugar to a pot. Warm up on low medium heat until sugar is dissolved, then all in dark soy sauce to mix. 
  • Serve in bowls - rice, chicken, bok choy and sauce on top. Serve with extra sauce on the side!
