Rice Cooker Kimchi and Beef Rice with Egg

This recipe is savory, tangy and packs in a flavorful punch! It's an effortless meal that cooks on it's own in a rice cooker. If you haven't tried a rice cooker meal yet, you'll need to try this one! It makes enough for 6 servings!

Ingredients

  • 2 cups short grain white rice
  • 2 cups vegetable broth
  • 1 cup kimchi
  • 1/2 onion sliced
  • 1 tablespoon light soy sauce
  • 1 stalk green onion cut into 1 inch pieces
  • 8 oz ground beef can used sliced beef too
  • fried eggs to top off bowls

Instructions

  • Add washed rice into rice cooker. Add in 2 cups vegetable broth.
  • Place kimchi on top, spread out evenly. Top off with onion.
  • Mix in soy sauce, green onion and ground beef on top.
  • Cook on the white rice function. When done, mix everything together. Add into bowls and top off with a fried egg and green onion garnish!
