A Chinese flatbread sandwich stuffed with a shrimp and egg omelet which makes for a delicious and satisfying breakfast! This sandwich bread is a traditional Chinese bread that’s baked, layered and unleavened. It can be eaten toasted by itself or stuffed!

Ingredients
1shaobingChinese layered flatbread
1/2teaspoonsesame oil
2largeeggswhisked
2-3piecesshrimppeeled and deveined and chopped
1garliccloveminced
Salt and pepper to taste
Garnish of green onions
Sesame seeds, chili sauce or hoisin sauce
Instructions
In a small bowl, whisk together sesame oil, egg, shrimp, garlic clove, salt and pepper and green onions.
Preheat a pan to medium heat with oil. Pour in egg mixture and allow egg whites to set, then fold in sides to fold into a more rectangular shape or shape of shaobing flatbread.
Slice flatbread in half to toast, then add egg shrimp omelette inside with sesame seeds, sesame oil and sauce. Serve fresh!
