Shrimp and Egg Omelet Shaobing Sandwich

A Chinese flatbread sandwich stuffed with a shrimp and egg omelet which makes for a delicious and satisfying breakfast! This sandwich bread is a traditional Chinese bread that’s baked, layered and unleavened. It can be eaten toasted by itself or stuffed!

Ingredients

  • 1 shaobing Chinese layered flatbread
  • 1/2 teaspoon sesame oil
  • 2 large eggs whisked
  • 2-3 pieces shrimp peeled and deveined and chopped
  • 1 garlic clove minced
  • Salt and pepper to taste
  • Garnish of green onions
  • Sesame seeds, chili sauce or hoisin sauce

Instructions

  • In a small bowl, whisk together sesame oil, egg, shrimp, garlic clove, salt and pepper and green onions.
  • Preheat a pan to medium heat with oil. Pour in egg mixture and allow egg whites to set, then fold in sides to fold into a more rectangular shape or shape of shaobing flatbread.
  • Slice flatbread in half to toast, then add egg shrimp omelette inside with sesame seeds, sesame oil and sauce. Serve fresh!
