Ingredients

Lo Mein

  • 8 ounces lo mein noodles or ramen noodles
  • 1 tablespoon vegetable oil
  • 8 ounces medium shrimp peeled and deveined, tails removed
  • 1 red bell pepper sliced
  • ½ onion sliced
  • Handful of baby spinach
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic minced

Sauce

  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon water
  • 1 teaspoon brown sugar
  • 1 teaspoon toasted sesame oil

Instructions

  • Cook your lo mein or ramen noodles according to package instructions. Drain and set aside.
  • In a small bowl, whisk together soy sauce, hoisin sauce, water, brown sugar, and sesame oil. Set aside.
  • Heat vegetable oil in a large pan or wok over medium-high heat. Add shrimp and cook for about 1 to 2 minutes per side, until pink and cooked through. Remove and set aside.
  • In the same pan, add sliced bell pepper and onion. Cook for 2 to 3 minutes until slightly softened. Add garlic and ginger, cooking for about 30 seconds until fragrant.
  • Add cooked noodles, shrimp, spinach, and sauce into the pan. Toss everything together until well coated and heated through. The spinach will wilt quickly.
  • Serve warm. Optional toppings include green onions or sesame seeds.
