Ingredients
4overripemashed bananas
1/2 cupmelted coconut oilcan sub unsalted butter
2largeeggs
1teaspoon vanilla extract
1 1/2 cups all purpose flour
3/4cupbrown sugar
1 teaspoonbaking soda
1teaspoonsea salt
1/2teaspoonground cinnamon
optional toppings or mix-ins:chocolate chips, shredded coconut, crushed pecans or walnuts
Instructions
Preheat oven to 325F. Prepare a loaf pan with spray or parchment paper.
In a large mixing bowl, mash bananas. Whisk in coconut oil, eggs and vanilla.
Add in flour, sugar, baking soda, sea salt and ground cinnamon.
Transfer batter to loaf pan and bake for 60-70 minutes, until a toothpick comes out clean.
