Simple & Classic Banana Bread

Ingredients

  • 4 overripe mashed bananas
  • 1/2 cup melted coconut oil can sub unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 3/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon
  • optional toppings or mix-ins: chocolate chips, shredded coconut, crushed pecans or walnuts

Instructions

  • Preheat oven to 325F. Prepare a loaf pan with spray or parchment paper.
  • In a large mixing bowl, mash bananas. Whisk in coconut oil, eggs and vanilla.
  • Add in flour, sugar, baking soda, sea salt and ground cinnamon.
  • Transfer batter to loaf pan and bake for 60-70 minutes, until a toothpick comes out clean.
