Sourdough French Toast Bites

This french toast is cooked in coconut oil to the perfect crispiness and coated in a delicious cinnamon sugar mixture. This recipe is perfect for using up any leftover or stale sourdough!

Ingredients

  • 1 large slice sourdough toast about 1" thick, 8-9" wide
  • 1 large egg
  • 3 tbsp almond milk*
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 3 tbsp coconut sugar**
  • 1/2 tsp cinnamon
  • 2 tbsp coconut oil***
  • maple syrup or yogurt to serve on side

Instructions

  • Cut sourdough slice into cubes.
  • In a low bowl, whisk together eggs, almond milk, vanilla extract and sea salt.
  • In another low bowl, mix together coconut sugar and cinnamon.
  • Preheat pan to low-medium heat with 2 tbsp coconut oil.
  • Add sourdough cubes into egg mixture, toss to coat, then place all into pan to cook.
  • Move around with spatula and cook until crispy golden brown on all sides.
  • Remove all cubes and place into cinnamon sugar mixture. Toss to coat and enjoy!

Notes

*Can use another thick slice of bread or 2 smaller slices of sourdough.
**Sub for another other nut milk or regular milk.
***Butter or ghee works as well.
