Stir-Fry Glazed Shrimp with Mushrooms + Broccoli

- 1 tablespoon avocado oil
- 3 cloves garlic minced
- 2 cups broccoli florets
- 1 cup mushrooms sliced
- 2 lbs large shrimp peeled and deveined
Serve With:
- cooked warm rice
- sesame seeds for garnish
- green onions for garnish
Sauce
- 1/4 cup low sodium soy sauce
- 1 tablespoon brown sugar
- 2 teaspoons sesame oil
- 1 tablespoon cornstarch mixed with 2-3 tablespoons warm water
Whisk together sauce ingredients and leave to the side.
Preheat pan to medium heat with avocado oil. Add garlic to cook until fragrant.
Add in broccoli and mushrooms to cook until slightly softened, about 4-5 minutes. Remove from pan and leave to side.
Add more oil if needed to cook shrimp until pink. Add broccoli and mushrooms back in and pour in sauce to toss together.
Serve warm with rice. Garnish with sesame seeds and green onions! Enjoy!
