Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup yogurt
  • 2 large eggs
  • 1/2 cup strawberries chopped
  • 1 medium banana mashed

Instructions

  • Preheat oven to 375F. Prepare muffin tin with liners and coconut oil spray.
  • In a mixing bowl, mash a banana. Add in whole milk, yogurt and eggs to whisk together.
  • Mix in flour, baking powder and sea salt. Gently mix everything together & fold in 1/2 of the chopped strawberries.
  • Add batter into muffin liners. Top each muffin with a bit of chopped strawberries. Transfer into baking oven & bake for 25 minutes until a toothpick inserted in center comes out clean.
