Ingredients

  • 1 egg
  • 1/2 cup plain yogurt full-fat is great for littles
  • 1/2 cup milk
  • 1 cup flour all-purpose or whole wheat
  • 1 tsp baking powder omit if under 1 year old
  • 1/2 tsp cinnamon
  • 1 tbsp melted butter or coconut oil
  • 1/2 small sweet potato mashed (about 1/3 cup)
  • 1/2 ripe banana mashed
  • 1/4 cup blueberries mashed or finely chopped for younger babies

Instructions

  • Steam sweet potato until very soft. Add it into a bowl along with banana and mash well until smooth.
  • Add in egg, milk, yogurt and milk.
  • Stir in flour, baking powder (if using), and cinnamon.
  • Gently fold in blueberries. Let batter rest 3–5 minutes to thicken slightly.
  • Cook in a lightly greased waffle maker until golden and cooked through.
