Ingredients

  • 1 small to medium steamed sweet potato mashed
  • 1 egg
  • ¼ cup plain whole milk yogurt
  • ¼ cup milk
  • ¾ cup all-purpose or whole wheat flour
  • 1 teaspoon baking powder optional, recommended for toddlers
  • Pinch of cinnamon
  • 1 small pear finely diced

Instructions

  • Mash the steamed sweet potato in a mixing bowl until smooth.
  • Add the egg, yogurt, and milk. Whisk until well combined.
  • Stir in the flour, baking powder, and cinnamon until just combined. The batter should be thick but pourable.
  • Gently fold in the finely diced pear.
  • Preheat and lightly grease your waffle maker.
  • Spoon batter into the waffle maker and cook according to manufacturer instructions, about 3 to 4 minutes, until golden but still soft.
  • Allow to cool slightly. Cut into strips or small pieces for baby.
