Ingredients
Buckwheat Pancakes
1cupbuckwheat flour
1teaspoonbaking powder
pinch of sea salt
1largeegg
1/4cupmelted coconut oil
1cupwhole milk
splash of vanilla extract
Apple Pie Pancakes
1cupall purpose flour
2teaspoonsbaking powder
1/2teaspoonsea salt
pinch of ground cinnamon
1cupmilk

1grated small apple
Chicken or Turkey Noodle Soup
1tablespoonolive oil
3clovesgarlicminced
1yellowoniondiced
8cupschicken broth
3stalks celerychopped
2bay leaves

1lb chicken breast or ground turkeychopped
8ozegg noodles
sea salt and pepper to taste
Instructions
Buckwheat Pancakes
Mix together wet ingredients first – milk, egg, coconut oil and vanilla. Add in dry ingredients to mix until just combined. Cook in a skillet with coconut oil.
Apple Pie Pancakes
Mix together wet ingredients first – milk, egg andcoconut oil. Add in dry ingredients to mix until just combined. Mix in grated apple. Cook in a skillet with coconut oil.
Chicken or Turkey Noodle Soup
On your instantpot, turn on sauté mode. add oil, garlic and onions to cook until softened. Add in broth, carrots, celery, bay leaves, parsley and ground turkey. Stir to mix up ingredients, then cover with lid making sure the nozzle is on sealing.
Cook on soup mode high pressure for 10 minutes. When done, release to venting. Allow all pressure to release, then open lid and remove bay leaves. Take out chicken and turn to sauté mode again.
Shred chicken, then place back in. When soup is at a light simmer, add in egg noodles to cook for another 6-7 minutes until noodles are cooked. Serve warm!
