Ingredients
1/3cupmelted coconut oilcan replace with butter
2/3cupmaple syrup
2largeeggs
1cupcanned pumpkin pureeNOT pumpkin filling
1/4cupmilk of choicewhole or almond
1teaspoonvanilla extract
1cup all purpose flour
3/4cupwhole wheat flour
2teaspoonspumpkin pie spiceor replace with 1/2 teaspoon ground cloves, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg and 1/2 teaspoon allspice
1teaspoonbaking soda
1/2teaspoonsea salt
Instructions
Preheat oven to 325F. Prepare a 8x4 loaf pan with oil spray or melted butter.
In a mixing bowl, add melted coconut oil, maple syrup, eggs, canned pumpkin puree, milk and vanilla.
Mix in all purpose flour, whole wheat flour, pumpkin pie spice, baking soda and sea salt. Mix until just combined.
Transfer to loaf pan and bake for 55-60 minutes until a toothpick comes out clean.
