I love documenting everything my toddler eats. Some days, she eats well but she also has off days where she eats only a few bites and refuses the rest. It’s a normal toddler thing!
These are three recipe I’ve made on repeat for my toddler that she loves.
The muffins have been a go-to freezer staple. They’re a great breakfast recipe you can quickly warm up in the microwave in the mornings.
I’ve made these pancakes with apple, blueberries and pumpkin too! You can easily switch out the fruit to change flavors up.
Last but not least, buckwheat waffles! Buckwheat is a healthy grain that includes many benefits!
3 Toddler Breakfast Meal Prep Recipes (Sugar-Free)
Ingredients
Strawberry Banana Muffins
- 1 3/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 3 medium bananas mashed
- 3/4 cup chopped strawberries
- 2 large eggs
- 3/4 cup whole milk greek yogurt
- 4 tablespoons coconut oil melted
- 1/4 cup whole milk
Persimmon Pancakes
- 1 1/4 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1 cup whole milk
- 1 large egg
- 1 persimmon mashed or grated
- coconut oil for cooking
Buckwheat Waffles
- 1 cup buckwheat flour
- 1 teaspoon baking powder
- pinch of sea salt
- 1 large egg
- 1/4 cup melted coconut oil
- 1 cup whole milk
- splash of vanilla extract
Instructions
Strawberry Banana Muffins
- Preheat oven to 400F. In a large bowl, mix together flours, baking powder, baking soda, sea salt and cinnamon.
- In another bowl, mash bananas, mix in eggs, yogurt, coconut oil & milk. Add wet into dry ingredients. Mix in strawberries.
- Add batter into lined muffin tins and bake for 20 minutes until a toothpick inserted in center comes out clean.
Persimmon Pancakes
- Mix together wet ingredients first – milk, egg and persimmon. Add in dry ingredients to mix util just combined. Cook in a skillet with coconut oil.
Buckwheat Waffles
- Preheat waffle maker with spray. Whisk all ingredients together and pour in to cook until done!
