Ingredients

  • 2 very ripe bananas
  • 1 egg
  • ¼ cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder optional for fluffiness
  • ½ teaspoon cinnamon
  • Pinch of salt
  • ½ cup finely grated apple
  • ½ cup finely grated carrot

Instructions

  • Preheat oven to 350°F and line or grease a muffin tin.
  • In a large bowl, mash the bananas until smooth.
  • Add the egg and milk and stir to combine.
  • Fold in the finely grated apple and carrot.
  • Add flour, baking powder, cinnamon, and salt. Mix gently until just combined. Do not overmix.
  • Fill muffin cups about ¾ full.
  • Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow muffins to cool completely before serving
