Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup whole wheat flour
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1/4 tsp salt
  • coconut oil, for cooking

Instructions

  • Blend – Add cottage cheese, eggs, flour, milk, baking powder and sea salt to a blender. Blend until smooth.
  • Cook – Heat a pan over medium heat, grease with butter or oil, and cook pancakes for about 2 minutes per side, until golden brown.
  • Serve & Enjoy – Let them cool slightly before serving. Pair with fresh fruit, yogurt, or a drizzle of maple syrup!
