It’s September!! In my head, that makes we are going into pumpkin spice season. Fall is two weeks away so I’m brainstorming and thinking of all the fall-inspired recipes I want to make. Pumpkin flavors, baking, sweater weather, cozy sweaters and rainy days are all things I am looking forward to!!
The other day, I bought a can of pumpkin puree and made three different recipes with it! I can’t wait to share them all! These pumpkin spice blondies were the first pumpkin recipe of the season, and there will be many more FOR SURE! These pumpkin spice blondies are so fluffy and similar to soft cookie bars. I can’t wait for you to try them!
I want to make my own oat milk pumpkin spice latte, pumpkin curry, pumpkin cookies and also pumpkin pie! The list of ideas are extremely long right now.
I asked myself this question not too long ago. Brownies have cacao powder. However, blondies don’t have cacao powder and are instead, vanilla-based. They both call for flour, sugar, oil/butter and eggs!
Pumpkin Puree – make sure you are using puree with no added spices/flavors. Puree is different that pumpkin pie filling, which has spices and is sweetened.
Coconut Sugar – You can replace this with regular cane sugar. I personally use coconut sugar in most of my recipes!
Coconut Oil – You can substitute this option with butter or oil. Coconut oil is one of my favorite fats to include in sweet baked goods!
Pumpkin Pie Spice – This helps give a kick of pumpkin on top of the pumpkin puree. Pumpkin pie spice is a mix of ground cinnamon, ginger, nutmeg, allspice, cloves and ginger!
Chocolate Chips – This is optional but highly recommended! Chocolate chips help add rich chocolate flavor to the recipe and is so perfect when melted on top!
When these came out the oven, it smelled so comforting and cozy! It’s giving me all the fall vibes!
