Ingredients

  • 1 tablespoon olive or avocado oil
  • 1/2 yellow onion diced
  • 1/2 cup diced carrots
  • 1 yellow squash diced
  • A handful of baby spinach
  • 1 lb ground turkey
  • Cooked rice for serving
  • Optional toppings: sesame seeds chopped green onions

Sauce:

  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar adjust to taste
  • 2 tablespoons honey
  • 2 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water

Instructions

  • Make the sauce: Mix soy sauce, water, rice vinegar, brown sugar, honey, garlic, and ginger in a small bowl. In another bowl, stir cornstarch with warm water to create a slurry. Set both aside.
  • Heat oil in a skillet over medium heat. Add diced onion and carrots to sauté until slightly softened, about 3-4 minutes. Add in yellow squash to cook for another 2-3 minutes. Remove veggies from the pan and add more oil. Add in ground turkey and cook until browned and fully cooked.
  • Add veggies back into pan with ground turkey.
  • Pour the teriyaki sauce and slurry into the skillet. Stir constantly until the sauce thickens and coats the turkey and veggies.
  • Plate with rice or noodles and top with sesame seeds and green onions if desired.
