Soba (buckwheat) noodles tossed in a honey sesame sauce making for a quick and simple take-out style meal! This dish only takes 20 minutes. You can make a bigger batch to last several meals!

The veggies I used in this dish are broccoli, red bell peppers and carrots! To add some protein, I picked edamame to toss with this dish! If you like the two flavors of sesame and honey, you’ll be a big fan of this sauce! I used some cashew butter to give it a more creamy taste. This sauce can even be used to cook your favorite proteins like tofu or chicken!

Sesame seeds were added on top for a hint of crunchy texture – they are a great source of healthy fats, vitamins and minerals! They work well on top of dishes like this or grounded into a tahini paste!

Soba noodles are brown, flat and thin. It’s mainly made with buckwheat flour and water, sometimes with added wheat flour. Soba is the Japanese name for buckwheat! There’s a dish called Zaru Soba served with a soy sauce based dipping sauce – typically served cold.

I don’t cook asian dishes too often even though I grew up eating it. I find my cooking to be more like rice, quinoa, potatoes, roasted veggies, meats with different sauces, soups, etc. I don’t do too many stir fries or soy sauce foods. It’s always comforting having those flavors again! This has a more westernized taste to the dish.

Ingredients

  • 8 oz soba noodles
  • 1 cup broccoli
  • 1 red bell pepper cut into strips
  • 1 whole carrot cut into strips
  • 1/2 cup edamame
  • green onions and sesame seeds for garnish

Honey Sesame Sauce

  • 2 tbsp sesame oil
  • 2 tbsp cashew butter
  • 2 tbsp honey
  • 2 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 clove garlic minced

Instructions

  • In a large pot, cook noodles according to package instructions. drain and add back into pot.
  • Mix together sauce; sesame oil, cashew butter, honey, tamari, rice vinegar and garlic, then leave to side.
  • In a medium skillet, heat up 1 tbsp sesame oil and cook broccoli, red bell peppers and carrot strips for 1 minute.
  • Add veggies into pot with noodles and edamame. Pour sauce all over and toss to coat! Garnish with fresh green onions and sesame seeds on top!
