I bought this mini loaf pan from Williams Sonoma! I have a 9 x 5 and 8 x 4 loaf but I thought, why not get myself a small cute pan? These are such cute little loaves and I’m so happy with this purchase. They had a Black Friday/Thanksgiving sale so I also got some other kitchen utensils and tableware!

One of my favorite sweet breads to make is banana bread! I’ve definitely made more than 20-30 loaves in the last year or so 😛 I purposely buy more bananas to ripen them on purpose to make banana bread. I love the natural sweetness from the bananas and when you bake it into the bread, it’s just so comforting and perfect on a cold day in.

Coconut flour is high in protein and fiber and naturally gluten-free. It can be hard to use this flour in certain recipes because it’s very absorbent, meaning there’s usually less flour and more wet/liquid ingredients in coconut flour recipes. Eggs are the prime ingredient – egg whites provide structure while the yolks contribute to the moisture

This recipe makes about 10 standard sized muffins. Each mini loaf pan is about the size of 2 muffins!

As always, I love my chocolate chips and a crunch, so I added crushed walnuts – both into the batter and on top.

Christmas is coming around the corner but I love baking banana bread year round! I’m currently working on a gingerbread recipe to share for the holidays. There’s just something super cozy and satisfying about baking on a cold rainy winter day.

These loaves can be placed in the fridge for up to 5 days (I doubt it will last that long). They also freeze well!

Ingredients

  • 3 medium bananas
  • 2 eggs
  • 1/4 cup cashew butter
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/2 cup coconut flour
  • 1/2 cup walnuts
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 350 F. Spray mini loaf pan with oil spray.
  • In a large bowl, mashed bananas, then crack in eggs, add cashew butter and vanilla extract. 
  • Add in dry ingredients; coconut sugar, baking powder, baking soda, cinnamon and sea salt. 
  • Add coconut flour, walnuts and chocolate chips to combine. 
  • Pour batter into mini loaf pan and top with extra walnuts and chocolate chips. 
  • Bake for 20 minutes or until a toothpick inserted in center comes out clean. 
  • Remove from oven and allow to cool for 10 mins before transferring to cooling rack.
