The star of the show in this dish is the fragrant rice with cooked in stock, ginger, garlic, oil and green onions. The chicken was so tender and perfect with the ginger scallion sauce and sweet dark soy sauce! This has been a favorite in our home recently!
Hainan chicken is a classic dish beloved by people in Singapore and all over Asia. There’s a long process in creating this recipe but I found a shortcut that’s delicious if you’re not wanting to spend hours and hours on this recipe.
The rice I made in the rice cooker is SO flavorful. It was a big hit in our family. My husband and toddler loved it. My toddler at it by big spoonfuls. It’s so satisfying seeing people enjoy the recipes I made!
The sauces here are: ginger scallion and sweet dark soy sauce. They are both ESSENTIAL in this meal. The rice and sauce truly make the meal. The chicken is typically poached but I had it steamed with the rice so the chicken fat soaked in the rice!!
I used my Toshiba rice cooker which includes 8 functions. I typically use the white rice, brown rice, quinoa and steam functions! When the rice and chicken were done, I added in bok choy to steam for 10 minutes!
Would you look at that flavorful and fluffy rice? I’m actually not a big fan of ginger but I didn’t even taste ginger. It added SO much fragrant flavor to the rice. I will 10000% make this again!!
Below are the two sauces I made. I made enough to last 3-4 meals. They store well in the fridge for up to 4 days too.. not that it would be stored that long because I bet you’d finish it in no time.

Rice Cooker Hainan Chicken and Rice (SO easy!)
Ingredients
- 2 cups uncooked white long grain rice
- 2 cups chicken broth
- 1 tablespoon fresh ginger minced
- 1 tablespoon garlic minced
- 1 stalk green onion cut into 1 inch strips and halved
- 1 tablespoon oil or chicken fat
- 3 chicken thighs
- 3 bundles bokchoy
Ginger Scallion Sauce
- 2 tablespoons minced ginger
- 2 stalks green onion finely minced
- 2 tablespoons oil
- pinch of sea salt
Sweet Dark Soy Sauce
- 1/4 cup water
- 2 small pieces of rock sugar or 2 tablespoons sugar
- 1/4 cup dark soy sauce
Instructions
- Wash rice and then add to rice cooker. Add in broth, ginger, garlic, onion and oil, add chicken thighs on top spread apart. Cook on white rice function. When done cooking, open and add in bok choy to steam for 5 minutes.
- To make ginger scallion sauce, mix all ingredients together. For the sweet dark soy sauce, add water and sugar to a pot. Warm up on low medium heat until sugar is dissolved, then all in dark soy sauce to mix.
- Serve in bowls – rice, chicken, bok choy and sauce on top. Serve with extra sauce on the side!
