As a mom of two, I’m always looking for easy, wholesome recipes that I can whip up in one nap window (or with a toddler “helping” beside me 😉). These Blueberry Oat Bars have been on repeat in our house lately—and for good reason! They’re soft, naturally sweetened with banana (no sugar needed!), and packed with simple, nourishing ingredients I already have in my pantry.

My toddler loves these for breakfast or snack time, and I love that they come together quickly and freeze well too! Are they a little messy? Yep. But worth it? Absolutely. My toddler usually ends up with blueberry stains on her cheeks and crumbs in her hair, but she’s smiling and full—and that’s all I care about. Plus, baby #2 will be snacking on these in just a few months, and I already can’t wait to watch her try them!

What I love most is how versatile they are. You can mix in other fruit, use dairy-free milk, or swap nut butters depending on what you have on hand. And they bake up soft enough for younger toddlers or even babies just starting solids.

Ingredients

  • ¾ cup quick cooking oats blended into flour
  • ½ cup all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • 1 ripe banana mashed
  • 1 egg
  • 2 tablespoons milk of choice dairy or non-dairy works
  • ¼ cup nut butter of choice
  • ¼ cup melted coconut oil
  • ½ cup fresh or frozen blueberries

Instructions

  • Preheat your oven to 375°F and line a small baking dish (I use an 8×8) with parchment paper or lightly grease it.
  • Blend your oats in a blender or food processor until they reach a flour-like consistency.
  • In a large bowl, whisk together the oat flour, whole wheat flour, baking powder, cinnamon, and sea salt.
  • Add the wet ingredients: melted coconut oil, nut butter, mashed banana, egg, and milk. Stir until well combined.
  • Gently fold in the blueberries—be careful not to overmix if using frozen ones, as they can bleed color.
  • Spread the batter evenly into your prepared dish and smooth the top.
  • Bake for 25 minutes, or until the top is golden and a toothpick comes out clean.
  • Let cool before slicing into bars (this helps them hold their shape better!).
