Ingredients
1cuprolled oats
3/4cupall-purpose flouror whole wheat
1/2teaspoonbaking soda
1/2teaspooncinnamon
pinchof salt
1/4cupmaple syrup
1/4cupcoconut oilmelted
1egg
1teaspoonvanilla extract
1cupchopped applespeeled for softer texture, optional
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, crack in egg and whisk in maple syrup, melted coconut oil and vanilla.
Add in dry ingredients - oats, flour, baking soda, cinnamon and salt. Fold in chopped apples.
Scoop dough using a heaping 1 tablespoon, place on baking sheet, and gently flatten.
Bake for 10–12 minutes until lightly golden, then let cool before serving.
