These apple oatmeal cookies are the perfect mix between a classic cookie and baked oatmeal. They’re soft, slightly chewy, and filled with texture from hearty oats and fresh chopped apples. Lightly sweet and simple to make, they’re a cozy, everyday cookie that feels just as good as it tastes!

Why I Love This Recipe
This recipe is made with such simple, everyday ingredients:
- One whole cup of oats
- One full cup of chopped apples
- Plus pantry staples like egg, coconut oil, vanilla, flour, and cinnamon
That’s it. Nothing complicated, which is exactly what makes it so perfect for baking with a toddler.
I also added a small amount of maple syrup, which lightly sweetens the cookies while still keeping them balanced. It makes them feel like a fun treat without being overly sweet.
s a mom, I’ve been more mindful about when and how I introduce treats with added sugar. I recently started giving my 3-year-old small, occasional treats like this one at home, where I know exactly what’s going into them.
What I love about this recipe:
- It uses just 1/4 cup of maple syrup for the entire batch
- The sweetness is light and balanced, not overwhelming
- It still feels like a fun “treat” without being overly sugary
- It’s made with wholesome ingredients like oats and fresh apples
It feels like a really good middle ground. Something special, but still simple and nourishing.

Baking With My Toddler
This is one of those recipes where your toddler can really help.
I let her scoop, pour, and stir everything in the mixing bowl. It’s not always neat, but that’s part of the fun. Giving her those little jobs makes her feel included and excited about what we’re making.
We shaped the cookies using a heaping 1 tablespoon scoop, and made a total of 16 small cookies, which turned out to be the perfect portion and size for little hands.
I didn’t peel the apples for this batch, and they baked up just fine. If you want an even softer texture, especially for younger toddlers, you can peel the apples before chopping them.

These apple oatmeal cookies are such a great option when you want something that feels like a treat, but is still made with simple, wholesome ingredients. With a full cup of oats and fresh apples, they have more texture and substance than your typical cookie, which makes them especially satisfying.
They’re also very toddler-friendly. The soft, chewy texture makes them easy to eat, and the smaller size is perfect for little hands. Since they’re lightly sweetened, they feel like a fun treat without being overly sugary, which is something I personally look for when making snacks at home.
It’s the kind of recipe that fits so well into everyday life. Simple ingredients, easy to make, and something you can feel good about offering as an occasional treat.
The Final Result
These cookies come out soft, slightly chewy, and just sweet enough. They have that cozy texture that feels like a cross between a cookie and a baked oatmeal bite.
It’s the kind of treat I feel good about making at home. Simple ingredients, easy steps, and something we can enjoy together.
