Ingredients
1cupall-purpose flour
1tspbaking powder
1/2tspbaking soda
1/4tspsalt
2very ripe bananasmashed
1/2cupcottage cheese
1/4cupunsweetened applesauce
1/4cupmilk
1egg
1/4cupmelted butter or coconut oil
1/2tspcinnamonoptional
Instructions
Preheat oven to 350°F and line or grease a muffin tin.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another bowl, mash the bananas well, then mix in cottage cheese, applesauce, milk, egg, and melted butter or oil.
Pour wet ingredients into dry ingredients and gently mix until just combined.
Divide batter evenly into muffin cups, filling about 3/4 full.
Bake for 18–22 minutes, or until the tops are set and lightly golden. Let cool before serving.
