- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 very ripe bananas mashed
- 1/2 cup cottage cheese
- 1/4 cup unsweetened applesauce
- 1/4 cup milk
- 1 egg
- 1/4 cup melted butter or coconut oil
- 1/2 tsp cinnamon optional
Instructions
- Preheat oven to 350°F and line or grease a muffin tin.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mash the bananas well, then mix in cottage cheese, applesauce, milk, egg, and melted butter or oil.
- Pour wet ingredients into dry ingredients and gently mix until just combined.
- Divide batter evenly into muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes, or until the tops are set and lightly golden. Let cool before serving.
