Chicken Yaki Udon Noodle Stir Fry

Udon is a thick chewy noodle used in Japanese cuisine! Yaki is a stir-fried dish which includes meat and veggies in a soy sauce based sauce. This is a delicious blend of flavors with stir-fried chicken and bok choy! You can make extras to have leftovers because you'd want more after your first bite!

Ingredients

  • 2 tablespoons sesame oil
  • 1 lb chicken dried
  • 5 scallions cut into 1" pieces
  • 4 cups bok choy chopped
  • 2 packages udon noodles

Stir-fry sauce

  • 2 tablespoons oyster sauce
  • 2 tablespoons dark soy saue
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon mirin
  • 2 teaspoons honey or maple syrup
  • 1 teaspoon sriracha

Instructions

  • In a small bowl, whisk together stir-fry sauce. Leave to side.
  • Preheat a large pan to medium heat with sesame oil and add in chicken to cook until done. Push to side scallions and bok choy to cook for 3 minutes until tender.
  • Add in udon noodles and stir-fry noodles to toss. Mix evenly until noodles are completely coated! Serve immediately with more scallions on top if desired!
