Cinnamon Apple Pancakes (Toddler Friendly)

Mornings in my house are busy—between feeding a newborn and keeping up with my energetic toddler, I need quick, nutritious breakfasts that my little one actually eats. That’s why these Apple Pie Pancakes have become a staple in our home for my toddler!

Ingredients

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • pinch of ground cinnamon
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted coconut oil
  • 1 grated small apple

Instructions

  • In a large bowl, whisk together milk, egg, coconut oil and grated apple.
  • Add in flour, baking powder, sea salt and ground cinnamon.
  • Heat a nonstick pan or griddle over medium-low heat and lightly grease with butter or coconut oil.
  • Pour small rounds of batter onto the pan.
  • Cook for about 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes.
  • Top with nut butter or yogurt!
