In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
In a separate bowl, whisk together the milk, egg, melted butter or melted coconut oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few small lumps are fine. Do not overmix.
Fold in the chocolate chips, if using.
Let the batter rest for about 5 minutes.
Heat a lightly greased skillet or griddle over medium heat.
Pour about ¼ cup of batter onto the skillet for each pancake.
Cook for 2 to 3 minutes, or until bubbles form on the surface and the edges begin to look set.
Flip and cook for another 1 to 2 minutes, or until golden brown and cooked through.
Serve warm with butter, maple syrup, almond butter, or your favorite toppings.
