Ingredients

  • cups all purpose flour
  • teaspoons baking powder
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • cups milk
  • 1 large egg
  • 3 tablespoons melted butter or melted coconut oil
  • ½ teaspoon vanilla extract optional
  • ½ to ¾ cup chocolate chips optional

Optional Ingredients:

  • Butter
  • Maple syrup
  • Almond butter
  • Fresh berries
  • Sliced bananas
  • Powdered sugar
  • Whipped cream

Instructions

  • In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  • In a separate bowl, whisk together the milk, egg, melted butter or melted coconut oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few small lumps are fine. Do not overmix.
  • Fold in the chocolate chips, if using.
  • Let the batter rest for about 5 minutes.
  • Heat a lightly greased skillet or griddle over medium heat.
  • Pour about ¼ cup of batter onto the skillet for each pancake.
  • Cook for 2 to 3 minutes, or until bubbles form on the surface and the edges begin to look set.
  • Flip and cook for another 1 to 2 minutes, or until golden brown and cooked through.
  • Serve warm with butter, maple syrup, almond butter, or your favorite toppings.
