Creamy Tuna-cado Sandwich

Dairy-free, creamy and requires no cooking! It's an ideal quick lunch idea when you don't want to turn on the oven or stovetop! This only takes 10 minutes too!

Ingredients

  • 1 5 oz canned tuna no salt
  • 2 tablespoons mayonnaise
  • 2 tablespoons plain plant based yogurt can also use regular greek yogurt
  • 1 tablespoon dijon mustard
  • 1/2 avocado chunks
  • 1/2 teapsoon sea salt
  • 1/4 teaspoon pepper

Instructions

  • In a bowl, mix together tuna, mayonnaise, plain yogurt, dijon mustard, avocado, sea salt and pepper.
  • Toast slices of bread and add tuna mixture on one slice of bread and top with tomato slices. Top with other slice of bread and enjoy!
