Dairy-free, creamy and requires no cooking! It’s an ideal quick lunch idea when you don’t want to turn on the oven or stovetop! This only takes 10 minutes too!

Sandwich ingredients like bread, tomatoes, lettuce/spinach, mayonnaise and deli meat/canned tuna is always in stock at home now. We recently moved into our new home and for the first week and a half.. we have no range! I couldn’t cook. We also didn’t have a microwave so if we ordered takeout, I’d eat the leftovers cold.
I’m thankful we have a range and microwave now! We just need to get our hood installed which is taking a lot longer than expected. There’s nothing to complain about though. I’m truly blessed to be able to do all the home renovations to a place I can call HOME now!
This was a recipe I made when we didn’t have a range to cook so of course, I resorted to sandwiches! Instead of making my classic turkey and hummus and combo on repeat.. I went to Trader Joes to get ingredients for this creamy tuna-cado sandwich!
I used vegan plant-based yogurt but you can use any plain yogurt of choice. Plain greek yogurt works well too if you aren’t vegan, plant-based or lactose intolerant like me, haha!
