Think regular tacos in tortillas but crispy! These were pan fried which made all the difference. Stuffed with bbq ground beef, mozzarella and spinach!

Ingredients
4corn tortillas
2tspolive oil
2cloves garlicminced
8ozground beef or other ground meat
1/2bell pepperchopped
3cupsbaby spinach
1/2cupshredded mozzarellai used vegan
guacamole as a side
Instructions
Preheat skillet to low medium heat with olive oil. Cook garlic until fragrant, then add in ground beef and cook until no longer pink.
Add in bell peppers to cook for 1 more minute, then stir in spinach until wilted. Remove from pan and leave to side.
Add a tad bit more oil to pan and add corn tortillas to warm up. I let both sides warm up and get a little crispy first. Next, add about 2-3 tbsp worth of the grounds mixture, 1-2 tbsp of mozzarella and then fold in half.
Cook until both sides get crispy and light brown, and the cheese starts melting! Serve with guac!
