Cucumber and Red Onion Salad

Easy pickled cucumber and red onion salad! Super refreshing and perfect in wraps and bowls! Just place all the ingredients into a bowl and allow to soak in the fridge for 2 hours before serving!

Ingredients

  • 4 small cucumbers sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup olive oil
  • 1/2 cup water
  • 1/2 cup rice vinegar
  • 3 tbsp fresh lemon juice
  • 1 tbsp honey
  • 2 tbsp dried dill
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  • Slice up cucumbers and red onions. Transfer to a large shallow bowl.
  • Add in olive oil, water, rice vinegar, fresh lemon juice, dried dill, salt and pepper.
  • Place into fridge and soak for 2 hours before serving!
