Easy pickled cucumber and red onion salad! Super refreshing and perfect in wraps and bowls! Just place all the ingredients into a bowl and allow to soak in the fridge for 2 hours before serving!

Many times I go to a Thai restaurant or order take out, they serve their rice dishes with a sweet pickled cucumber salad. I knew it was pretty easy to make but I never made the efforts to do so until now!
During the week days, I’m in the apartment with Jovin all day since we both do work from home! I might go jogging or walking in the morning some days. Otherwise, I don’t walk outside unless I take out the trash or get mail, haha!
I haven’t gone to the grocery store in 2 1/2 weeks because of the current stay-at-home circumstances and not so great air quality. I’ve been doing grocery deliveries and staying home unless it’s necessary to go out! Yesterday, I went to Trader Joes to check out the fall items and I got a few pumpkin and apple spice items. I’m a love of pumpkin flavors!! Also, Trader Joes does NOT play around with their pumpkin spice hype :’) I’m 100% support it.
I ordered several red onions and a bag of cucumbers for some recipes I’m testing this week! After I made this salad, I can’t believe I didn’t making it at home earlier!!

In this recipe, I used a whole red onion and 4 cucumbers. If you want more cucumbers, can always double the cucumber amount and keep the same amount of onions. If you don’t like onions, leave that out and just make a cucumber salad!

Dried dill was used instead of fresh dill so the flavor would not be too strong. If you really like dill, feel free to use fresh dill, but make sure you chop it into small pieces first!
I served this with my cilantro-lime chicken breasts and quinoa rice! Such a delicious fresh meal packed with herby flavors!

Cucumber and Red Onion Salad
Ingredients
- 4 small cucumbers sliced
- 1/2 red onion thinly sliced
- 1/4 cup olive oil
- 1/2 cup water
- 1/2 cup rice vinegar
- 3 tbsp fresh lemon juice
- 1 tbsp honey
- 2 tbsp dried dill
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Slice up cucumbers and red onions. Transfer to a large shallow bowl.
- Add in olive oil, water, rice vinegar, fresh lemon juice, dried dill, salt and pepper.
- Place into fridge and soak for 2 hours before serving!
