Ingredients
3/4cupoat flour
2teaspoonsbrown sugar
1/2teaspooncinnamon
1teaspoonbaking powder
1/2teaspoonbaking soda
1/2cupalmond milk
1largeeegg
2tablespoonsapplesauce
1/4cupapplesfinely chopped
coconut oilfor cooking
Sauteed Cinnamon Apple Topping
1teaspooncoconut oil
1/4cupchopped apples
2teaspoonsbrown sugar
1/4teaspooncinnamon
Instructions
In a large mixing bowl, mix together oat flour, brown sugar, cinnamon, baking powder and baking soda.
Whisk in almond milk, egg and applesauce. Gently fold in chopped apples.
Preheat pan with coconut oil to medium heat. Add in batter 2 tbsp at a time for mini pancakes or 1/4 cup for standard sized pancakes. Let pancakes cook until bubbles form, then flip. Cook until both sides are golden brown! Top with sautéed cinnamon apple topping & maple syrup!
