Soft & fluffy on the inside, golden & slightly crispy on the outside! There’s chopped apples in each bite & a sautéed cinnamon apple topping which tied together this whole recipe!

I’m a lover of simple classic fluffy pancakes, but I also love switching it up a bit with flavors. I love lemon blueberry, banana and also these apple pie pancakes!
I’ve still been making my own oat flour at home so most of my pancake recipes call for oat flour. It’s a cheaper alternative! This recipe includes small chopped apple bits inside the batter and also a cinnamon apple topping on top. This smelled amazing while cooking and it tasted just as good!

Oat Flour Cinnamon Apple Pie Pancakes
Ingredients
- 3/4 cup oat flour
- 2 teaspoons brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup almond milk
- 1 large eegg
- 2 tablespoons applesauce
- 1/4 cup apples finely chopped
- coconut oil for cooking
Sauteed Cinnamon Apple Topping
- 1 teaspoon coconut oil
- 1/4 cup chopped apples
- 2 teaspoons brown sugar
- 1/4 teaspoon cinnamon
Instructions
- In a large mixing bowl, mix together oat flour, brown sugar, cinnamon, baking powder and baking soda.
- Whisk in almond milk, egg and applesauce. Gently fold in chopped apples.
- Preheat pan with coconut oil to medium heat. Add in batter 2 tbsp at a time for mini pancakes or 1/4 cup for standard sized pancakes. Let pancakes cook until bubbles form, then flip. Cook until both sides are golden brown! Top with sautéed cinnamon apple topping & maple syrup!
