ABC Muffins (Apple, Banana & Carrot)
Ingredients
- 2 very ripe bananas
- 1 egg
- ¼ cup milk
- 1 cup all-purpose flour
- 1 teaspoon baking powder optional for fluffiness
- ½ teaspoon cinnamon
- Pinch of salt
- ½ cup finely grated apple
- ½ cup finely grated carrot
Instructions
- Preheat oven to 350°F and line or grease a muffin tin.
- In a large bowl, mash the bananas until smooth.
- Add the egg and milk and stir to combine.
