These breakfast burritos are filled with scrambled eggs, crisp turkey bacon and crunchy broccoli! It’s an erewhon copycat of their $17 burrito but this is EVEN BETTER! My burrito recipe is pan-fried for a crispy exterior! I would eat this burrito for any meal!

I’ve tried the Erewhon $17 breakfast burritos a few times and after I tried it again last week.. I knew I have to recreate my own at home. First of all, I wanted to save money because I’m starting to really crave burritos this pregnancy!
This burrito I made at home has EVEN better flavor because of the quality of ingredients I used (not that Erewhon doesn’t have good quality ingredients!). I used pasture-raised eggs, organic broccoli and uncured turkey bacon.
They broccoli was still crunchy and turkey bacon had a light crisp. I mean.. look below! The turkey bacon has a little char to it which made it so much tastier!

I ate this burrito with salsa verde but you can use any salsa of choice, sour cream and/or avocado.
This burrito is simply made with just a few ingredients. I honestly think the hack to make a burrito taste better is to roll up the burrito, then pan-fry both sides until lightly browned. Having a lightly crisp exterior makes each bite WAY BETTER. Trust me!

Easy Breakfast Burritos
Ingredients
- 2 large burrito tortillas I got ones from Whole Foods
- 2 teaspoons olive or avocado oil
- 1 cup broccoli florets cut into small pieces
- 6 large eggs scrambled
- sea salt and pepper to taste
- 4 slices turkey bacon
- salsa verde or other salsa of choice
Instructions
- Preheat pan to medium heat with oil. Add in broccoli florets and cook until slightly softened, seasoning with salt and pepper. Push to side of pan.
- Add more oil to the pan and pour in scrambled eggs. Season with salt and pepper. Cook until no longer runny. Push to side with broccoli.
- Add more oil to the pan and add in turkey bacon slices. Cook until lightly browned.
- Warm up burrito sized tortilla and add in eggs, broccoli and turkey bacon. Roll up into a burrito and pan-fry both sides in the pan until lightly browned and crisp. Serve with salsa, sour cream and/or avocado!
