Here’s a delicious udon noodle recipe with flavorful beef & crunchy bok choy! It’s a simple recipe made in 20 minutes & uses a simple sauce that brings SO much flavor!

Udon is one of my favorite noodles! It’s thick, chewy and easily soaks up the toss it’s tossed in so it gets super flavorful. Udon is a Japanese style wheat noodle used in noodle soups and stir-fries.
I love making both noodle soups and stir-fries but recently, I’ve been in a stir-fry mood. It’s so flavorful in this simple sauce I tossed it in.
You can also use ground turkey or chicken in this recipe. I have low iron during this pregnancy so I’ve been trying to up my iron intake!

I’ve made a handful of udon recipes but I’m serious when I say this is my FAVORITE one. The best part is that the sauce is actually MORE SIMPLE. It’s made with just sesame oil, mirin and light soy sauce. It coats all the noodles, veggies and meat perfectly. I want more of this dish now!
