Healthy Breakfast Burrito with 25g Protein – A Weekly Family Staple
Ingredients
- 1 teaspoon avocado or olive oil
- Diced bell peppers and onions
- A handful of baby spinach
- 3 breakfast sausages cooked and sliced
- 3 scrambled eggs
- Sliced avocado
- Shredded cheese optional
- Salsa verde for serving
- Warm large tortilla
Instructions
- Heat a skillet over medium heat. Add the diced peppers and onions. Cook for a few minutes until they’re soft and slightly caramelized.
- Push the veggies to the side and add the breakfast sausages and cook until they’re browned and fully cooked through. Cut into bite sizes. Toss in a handful of baby spinach and stir until it wilts down, about 30 seconds to 1 minute.
- Pour eggs over the veggies and sausage. Gently scramble until just set.
- Lay a warm tortilla on a plate. Add the egg and veggie mixture, sausage slices, and avocado.
- Spoon over some salsa verde (or pico de gallo / sour cream if you prefer), sprinkle on cheese if you like, then roll it all up tightly.
- Slice in half if desired and dig in while warm.
