Healthy Teriyaki Ground Turkey Stir-Fry
Ingredients
- 1 tablespoon olive or avocado oil
- 1/2 yellow onion diced
- 1/2 cup diced carrots
- 1 yellow squash diced
- A handful of baby spinach
- 1 lb ground turkey
- Cooked rice for serving
- Optional toppings: sesame seeds chopped green onions
Sauce:
- 1/2 cup low-sodium soy sauce
- 1/4 cup water
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar adjust to taste
- 2 tablespoons honey
- 2 teaspoons minced garlic
- 1 teaspoon ground ginger
- 1 tablespoon cornstarch
- 2 tablespoons warm water
Instructions
- Make the sauce: Mix soy sauce, water, rice vinegar, brown sugar, honey, garlic, and ginger in a small bowl. In another bowl, stir cornstarch with warm water to create a slurry. Set both aside.
- Heat oil in a skillet over medium heat. Add diced onion and carrots to sauté until slightly softened, about 3-4 minutes. Add in yellow squash to cook for another 2-3 minutes. Remove veggies from the pan and add more oil. Add in ground turkey and cook until browned and fully cooked.
- Add veggies back into pan with ground turkey.
- Pour the teriyaki sauce and slurry into the skillet. Stir constantly until the sauce thickens and coats the turkey and veggies.
- Plate with rice or noodles and top with sesame seeds and green onions if desired.
