Ingredients

  • 1 sweet potato cooked and mashed
  • 2 eggs
  • 1 cup plain full-fat yogurt
  • 1 tablespoon olive oil melted butter, or coconut oil
  • 1 1/4 cups all-purpose flour or oat flour
  • 1 1/2 teaspoons baking powder
  • Pinch of cinnamon optional

Instructions

  • Preheat oven to 350°F and line a mini muffin pan.
  • Mash the sweet potato until completely smooth. Add in eggs, yogurt and oil.
  • Stir in the flour, baking powder, and cinnamon. Mix gently until just combined.
  • Fill muffin cups almost to the top and bake for 20-22 minutes, until set and lightly golden. You can also stick in a toothpick to check if it's done.
  • Let cool completely before serving!
