I originally tested this recipe with one banana, and it tasted a little too plain. After adjusting to two ripe bananas plus applesauce, the flavor became naturally sweeter, softer, and much more toddler-approved.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 very ripe bananas mashed
  • 1/2 cup cottage cheese
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup melted butter or coconut oil
  • 1/2 tsp cinnamon optional

Instructions

  • Preheat oven to 350°F and line or grease a muffin tin.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In another bowl, mash the bananas well, then mix in cottage cheese, applesauce, milk, egg, and melted butter or oil.
  • Pour wet ingredients into dry ingredients and gently mix until just combined.
  • Divide batter evenly into muffin cups, filling about 3/4 full.
  • Bake for 18–22 minutes, or until the tops are set and lightly golden. Let cool before serving.
