Breakfast burritos are one of my favorite breakfasts as of recently so I’m sharing my GO-TO recipe that I make all the time. This one has fluffy scrambled eggs, chicken breakfast sausage links, peppers, onion, spinach and avocado. It’s packed with SO much flavor!

I’ve been sharing a bunch of breakfast burritos on my Instagram. I’m 24 weeks pregnant and craving burritos and tacos big time. I’ve been craving eggs so I have them everyday! Sometimes I’ll make it scrambled with veggies, into an omelette, fried on top of avocado toast or in a burrito like I did here.
Burritos ALWAYS satisfy. I eat a big breakfast so this is perfect for me! I love how it’s not super greasy or healthy unlike many breakfast burritos I’ve had at restaurants. This one is a GOOD one… so don’t miss out!
When it comes to making burritos, I always have scrambled eggs and veggies! I ALWAYS pan-fry the burrito after rolling it up so it gets extra crispy. It makes a HUGE difference.

Breakfast Burrito Ingredients:
- Burrito Sized Tortilla – Instead of regular tortilla wraps, make sure it’s big enough to wrap a burrito! Ones for burritos will be labeled specially “burrito sized”. I like the brand 365 Whole Foods and La Fe Tortilleria.
- Avocado or Olive Oil – These are the two oils I usually use for cooking savory foods. Avocado is great for high heat!
- Veggies – I added spinach, onion and red bell pepper into this burrito but you can sub it for other veggies like onions, mushroom or broccoli!
- Eggs – This is always a must in my breakfast burritos. I’m currently going through an egg craving in pregnancy.
- Chicken Breakfast Sausage Links – I used Amylu’s paleo + nitrate free chicken breakfast links. I love eating it on it’s own and also when added into breakfast burritos!
- Avocado – This makes all burritos and tacos taste better. I love my healthy fats!
- Shredded Cheese – This is optional and since the burrito is pretty packed, I don’t always add in cheese. I’ll usually sprinkle just a little because I roll it up. I like the brands Violife Foods or Miyokos Creamery.
I also have other breakfast burritos that are SUPER delicious. I made an Erewhon copycat breakfast burrito and a turkey bacon and egg burrito.

Breakfast Burrito with Egg + Chicken Breakfast Sausage
Ingredients
- 1 burrito tortilla I like the Whole Foods 365 brand or La Fe Tortilleria
- 1 teaspoon olive oil
- 1/2 cup red bell pepper and onion diced
- handful of baby spinach
- 2 large eggs scrambled
- 2 chicken breakfast sausage link I like the brand Amylus
- 1/2 medium avocado
- shredded cheese optional
- toppings: salsa, sour cream
Instructions
- Preheat pan to medium heat with oil. Add in bell peppers and onions to cook until soft, then add in baby spinach until wilted. Pour in eggs to scramble with the veggies until cooked, seaosn with sea salt and pepper. Add into burrito tortilla.
- Add more oil to the pan to cook chicken breakfast links until lightly browned. Cut into small pieces, then add into burrito tortilla.
- Add avocado into tortilla. Roll up into a burrito and pan-fry both sides in the pan until lightly browned and crisp. Serve with salsa, sour cream and/or avocado!
