Cinnamon Coffee Cake with Streusel Topping

Ingredients

  • 2 cups all purpose or oat flour
  • 1/2 cup brown sugar
  • 1/2 cup cane sugar
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 3/4 cup coconut oil softened
  • 2 large eggs
  • 1/2 cup almond milk
  • 1 teaspoon vanilla

Cinnamon Sugar Filling

  • 3/4 cup brown sugar
  • 1/2 cup all purpose or oat flour
  • 1 tablespoon ground cinnamon

Streusel Topping

  • 3/4 cup brown sugar
  • 3/4 cup all purpose or oat flour
  • 1 tablespoon cinnamon
  • 1/2 cup butter room temperature and crumbled

Instructions

  • Preheat oven to 350F. Prepare a 8×8 baking pan with parchment paper.
  • In a large bowl, mix together oat flour, sugars, baking powder and sea salt.
  • In another bowl, whisk together coconut oil, egg, almond milk and vanilla. Add dry ingredients into wet ingredient bowl.
  • Transfer half the batter into baking pan, then sprinkle cinnamon sugar filling in center. Add rest of batter on top and sprinkle topping over the tops. Bake for 35-40 minutes or until a toothpick inserted in center comes out clean! Allow to cool before cutting into 20 squares!
