Cinnamon Coffee Cake with Streusel Topping
Ingredients
- 2 cups all purpose or oat flour
- 1/2 cup brown sugar
- 1/2 cup cane sugar
- 2 teaspoons baking powder
- 1 teaspoon sea salt
- 3/4 cup coconut oil softened
- 2 large eggs
- 1/2 cup almond milk
- 1 teaspoon vanilla
Cinnamon Sugar Filling
- 3/4 cup brown sugar
- 1/2 cup all purpose or oat flour
- 1 tablespoon ground cinnamon
Streusel Topping
- 3/4 cup brown sugar
- 3/4 cup all purpose or oat flour
- 1 tablespoon cinnamon
- 1/2 cup butter room temperature and crumbled
Instructions
- Preheat oven to 350F. Prepare a 8×8 baking pan with parchment paper.
- In a large bowl, mix together oat flour, sugars, baking powder and sea salt.
- In another bowl, whisk together coconut oil, egg, almond milk and vanilla. Add dry ingredients into wet ingredient bowl.
- Transfer half the batter into baking pan, then sprinkle cinnamon sugar filling in center. Add rest of batter on top and sprinkle topping over the tops. Bake for 35-40 minutes or until a toothpick inserted in center comes out clean! Allow to cool before cutting into 20 squares!
