A savory and sweet ground turkey stir fry with mixed veggies tossed with wheat noodles! It’s chewy, crunchy and flavorful! The sauce has a secret ingredient that adds a subtle sweetness and makes a big difference!

This recipe was truly one of those meals I made up on the spot in the kitchen. My sauce was simply soy sauce, water/broth, rice vinegar, grated apple, garlic and sesame oil. They’re all staple ingredients for me!
I was going to use soba noodles for this recipe but I realized I just ran out… so I tweaked the recipe a bit to be suitable with wheat noodles. I have to say, I loved it and would 100% make this again!

I’m currently 26 weeks pregnant, a couple days away from being 27 weeks which means I’m entering my THIRD TRIMESTER. It’s true when they say second pregnancies go by more quickly! I’m more focused on taking care of my toddler & doing as much as I can. I remember I missed cooking so much postpartum but I knew I needed to rest. This is why I’m cooking and sharing as many recipes as I can!
I’m definitely way more tired, belly is heavier and uncomfortable but I’m pushing through. It’s worth the tasty meals and being able to share with you all!

Ground Turkey & Veggie Stir Fry with Noodles
Ingredients
- 6-8 oz wheat noodles
- 2 teaspoons oil
- 16 oz ground turkey
- 2 cups broccoli and cauliflower florets
- 3/4 cup mushrooms sliced
Sauce:
- 1/4 cup light soy sauce
- 1/4 cup water or vegetable broth
- 1 1/2 tablespoons rice vinegar
- 1/2 grated apple
- 3 cloves garlic minced
- 2 teaspoons sesame oil
Instructions
- Prepare wheat noodles according to package instructions. Boil and drain, leave to side.
- Preheat a large pan to medium heat with oil. Add in broccoli, cauliflower and mushroom to cook until slightly softened, but still crunchy.
- Push to the side of pan and add more oil. Add in ground turkey to cook until done. Add in cooked noodles and pour in sauce. Mix everything to combine. Eat warm with a garnish of green onions!
